Named after the mythological Irish horse Énbarr, a symbol of warmth, elegance and imagination, the restaurant is a space that feels intimate, refined and welcoming. Subtle touches of Irish heritage and storytelling are woven throughout the space - like stepping into a familiar place for the first time.

Declan McGovern

Group Chef

Hailing from Ireland, Executive Chef Declan McGovern brings almost two decades of experience across Ireland, the UK and Australia, with a career that includes The Landmark London, Galway’s O’Grady’s on the Pier and Matt Moran venues in Sydney. Most recently, he delivered a masterclass at the National Celtic Folk Festival, sharing a taste of home through Irish ingredients and culinary storytelling. At Enbarr, he reimagines traditional Irish cuisine and hospitality through Victoria’s seasonal produce, celebrating the shared climate and flavours of both regions. The result is Irish cooking that feels modern and heartfelt, crafted for sharing - storytelling on a plate.

Joseph Elarmo

Head Chef

Hailing from the Philippines, Chef Joseph brings a deep-rooted passion for French cuisine shaped by his training at Enderun Colleges, a prestigious culinary school in partnership with École Ducasse, France. There, he began his journey in the Banquets and Events Department, laying the foundation for his career in fine cuisine. His journey began in pastry and banquet kitchens, which shaped his culinary career, teaching him meticulous technique and precision. Since then, he has honed his craft through experiences in the United States, Australia, the Maldives and his home country, guided by mentors who instilled both discipline and creativity in his approach. He brings his classical French foundation into a new chapter at Enbarr, where French and traditional Irish cuisines are rooted in simplicity, seasonality, storytelling and innovation.
